Kona beans are grown in Hawaii and are treasured worldwide for their aroma and flavor. Kona beans are some of the most expensive on the market, and have come to be known as the best of the best.

For over 175 years, Kona beans have been growing continually on Hawaii in the North and South Districts of Kona, an area about 20 miles long and 2 miles wide.

In the shadow of two volcanic mountains, the Kona Districts have a unique microclimate of sunny mornings and cloudy afternoons which provide natural shade. The volcanoes protect the area from strong trade winds that would otherwise harm the coffee plants and give the soil its ashen quality in which the plants thrive.

The mountains also give Kona a cool, dry, winter season for harvesting and a rainy summer when the coffee plant is growing and the fruit is developing.

Most Kona coffee is grown on large, old-growth, productive Typica trees. Kona trees grow strongly on the steep, well-draining slopes of the two enormous volcanic mountains.

Known today as Kona Typica, this coffee variety was first called Guatemalan when it was introduced back in 1892 by an Oahu grower named Hermann Widemann.

After this variety was grown for several years on the Big Island of Hawaii, growers were convinced that this coffee was far superior to the Brazilian variety which was previously brought to Kona.

As a result of their care and hard work, Kona Typica continues today as it has for over 100 years.

Kona beans flowers bloom in early spring. Because of the careful cultivation by the farmers, the plants dont develop fruit all at the same time and instead develop in rounds, one section at a time.

The Kona bean farmers hand picks the beans. This is because only the ripe coffee cherry is picked from the Kona tree, each tree may get 5 visits during the harvest season in order to get as much fruit as possible. Picking the fruit by hand gives the Kona coffee farmer the opportunity to pick just the ripest coffee cherry, resulting in a sweet cup of coffee.

This is an enhancement over the mechanical harvesting done with most coffees that ends up including the immature, imperfect and old Coffee cherries that tinge the flavor of the coffees.

Most Kona coffee farms are about 4 acres in size and are family-owned and operated. Because of the small size of the farms, each plant is able to receive specialized care.

As the farmer walks through his orchard, he can quickly see the general health of each plant and cultivate appropriately. The Kona trees are often planted alongside vegetables, fruit and other trees like banana, macadamia and avocado.

The Kona coffees themselves are full-bodied and rich in flavor with a hint of spice. This combined with the hand-picked quality of the coffees on less than two thousand acres in the entire world lends itself to the expense of the Kona beans on the open market.

Due to this expense, Kona beans are often blended with other coffees before being sold at your local market.

If youre buying a bag of beans labeled Kona, you should be very careful to read the label. Most of these bags contain 10% or less Kona coffees and the rest are inferior, South American beans.

If you want to experience the true bliss that is Kona coffee, make sure the bag you buy is 100% Kona beans.

This may not be available in your local market; instead, look to purchase Kona coffees online from a Hawaiian retailer in order to get true Kona beans directly from the source.

When you think of cocktails, your immediate image is probably of highly colored fruit juices and strong spirits, dressed with a sparkly umbrella and a piece of pineapple. It might surprise you to know about the vast range of coffee cocktails around, for those looking for a different sort of lift. With the advent of grind and brew coffee makers we can make the perfect cup of coffee right in our kitchen, now we just need something exciting to mix with it!

We will start with the very simple and innocent frappe, mostly found in Europe and South America it is made by mixing crushed ice, sugar milk and cold espresso, and is a popular drink during hot weather. The addition of one measure of brandy and another of cr?me de cacao makes a more exciting drink.

The antithesis of the simple frappe is the decadent Cappuccino Borgia. This consists of a mixture of orange juice, freshly peeled orange, a double dark espresso, milk, and chocolate ice cream. The sweetness of the ice cream is offset but the sharpness of the citrus fruit and the bitter taste of the coffee creating a fantastic overall taste.

Back to something lighter, and we could try a Calypso Cooler, straight from the Caribbean. A couple of properly ripe bananas and some coffee ice cream mixed with a cool strong filter coffee is the base. However, for a truly Caribbean experience, a measure of rum can five the Cooler the lift it requires.

For a filling alternative, we can look to the ancient world for a Caffee Zabaglone, or a more modern version found in New Orleans. The Caffee Zabaglone mixed marsala, sugar, egg yolks a little salt and a good strong Italian brew. This was all whisked and heated until thick. The New Orleans version incorporates a strong full bodied American roast with full cream, eggnog and bourbon, and is popular around Mardi Gras.

For a truly warming experience, the Scandinavians have concocted the Cardamom Caffee. Traditionally this spice is used in thick strong Turkish coffee, and it can give quite a kick to any hot drink. For the Cardamom Caffee, mix Cognac and Curacao, with sugar and a Cardamom pod. Heat briefly and then set alight with a match. Add a strong dark filter coffee and enjoy the results!

Cleaning coffee makers



Cleaning your coffee maker is necessary to keep your machine producing great tasting coffee. Each machine type will require a different cleaning method. We discuss how to clean popular coffee machines such as espresso machines, moka pots (stove top brewers), French Press and Drip Filter brewers.



Drip Filter

The Drip Filter brewer is very easy to clean. Just follow these 6 simply steps:

1. Dissolve 1 oz of citric acid in 4 cups of hot water.

2. Add 4 cups of cold water to the solution and pour the solution into the water chamber.

3. Turn on your coffee maker (without the filter) and let about half of the water solution run through the machine.

4. Stop the machine and let it sit for 15 minutes.

5. Start it up again, and let the rest of the cleaning solution run through the machine.

6. Rinse everything out by running 8 cups of cold fresh water through your machine at least 4 times.




French Press or Plunger

The French Press brewer is a snap to clean. Simply remove the plunger and empty the spent coffee into a rubbish bin. Use soapy water to clean the plunger and the glass jug.
Make sure all parts are rinsed well (ensure no soapy residue remains). Then allow all the components to air dry.




Espresso Machines

To clean an Espresso machine just follow these steps:

1. Remove the group handle from the espresso machine and empty the coffee puck into a rubbish bin. Rinse the group handle with warm water.

2. Pour your chosen cleaning solution into the filter basket in the group handle. With your espresso machine ready to brew, put the group handle in the espresso machine just like you were going to brew some coffee.

3. With a bowl under the group handle, start the machine and begin pulling the 'shots'.

4. Leave the machine on for about five seconds. Then stop for ten seconds, then on again for five seconds. Repeat this process another six times.

5. Now remove the group handle from the machine and rinse with warm water.

6. Turn your machine on without the group handle in. This will fully rinse the group itself.

7. Now using the brush for your espresso machine, clean any residue from under the brewing group. Once complete, turn it on to give the group head another rinse.




Moka Pots

To clean a Moka pot is easy to clean. Just dismantle the Moka pot and rinse in warm water. Do not put the Moka pot in the dishwasher as it will discolor the pot.

Our Crack Coffee team is spearheading the operations for the Plano, Texas store and have scoured several different coffee producers and tea importers to bring a more wide array of coffees and teas to their online and retail store operations.


Plans for coffee and tea tastings are currently underway for the anticipated opening of their retail store operations on the corner of Park and Los Rios (near the bordering cities of Parker and Murphy) on a monthly basis.


HNB Gourmet's primary goal for this endeavor is to bring only the best coffees from around the world to their customer's doors.


"So many people think that coffee should taste bitter without any other flavors coming through," says Robert . "We're hoping to change people's opinion that coffee needs to have flavor shots and sugar to overpower the bitterness that comes when a company purchases substandard product and then compensates by over-roasting the coffee beans."


Scott adds, "When coffee beans are over-roasted, they turn the end product bitter rather than bring out the natural flavors."


Every week, HNB Gourmet will have a "Coffee Break" and an "Afternoon Tea" hosted at their Plano, Texas store. When it comes to coffee, there are so many variations and options that it can almost be overwhelming. But if you want a rich, pure cup of coffee, then you've undoubtedly discovered for yourself that whole bean coffee is the best option. The best coffee is the freshest coffee, and whole bean coffee is the freshest you can get. Pre-ground coffee has been sitting for anything from a couple of days to many months, and it's just not the same as brewing a cup of coffee immediately after grinding the beans. Even cheaper whole bean coffee blends taste good if you grind the beans and brew the coffee straight afterwards.

If you have the opportunity to buy good whole bean coffee in bulk, then it's worth freezing the unopened bags. This helps keep them fresh for even longer. Of course, there is a downside to whole bean coffee - you have to grind the beans. For most of us that means buying a coffee grinder. If you're in a hurry, it can be annoying to have to take the extra step of grinding the beans, but once you sit down with that beautiful cup of coffee you'll forget the extra time it took to prepare it. The euphoria may even carry you right through the task of cleaning the coffee grinder!

The reality is that whole bean coffee isn't an instant coffee fix - it takes time to get that perfect cup of coffee. So if flavor isn't really of top importance to you, or you're lacking time or patience, then you may be better off sticking with instant coffee varieties. Most people, unfortunately, can't get past the instant gratification approach of today's society, and chucking a spoonful of coffee into a cup and pouring in hot water is about as instant as it gets.

Still, there are ways around this. When I want to make a fresh cup of coffee, I grind the beans and put the coffee onto brew. Then, as the coffee grinder is already on the bench, I grind some extra beans and store the resulting coffee in an airtight jar. Sometimes it's handy to be able to pull out pre-ground beans for a quick cup of coffee. Maybe it's not quite as good, but sometimes I'm willing to sacrifice a little bit of flavor to gain some time.

Oh wow! This Banana Foster coffee is DELICIOUS. I can't rave about it enough. Completely and totally yummy, it makes me look forward to my morning cup.
